Grandma's Christmas Fruitcake

Ingredients:
  • 2 cups raisins
  • 1 cup uncooked prunes
  • 1 cup halved candied cherries
  • 2 cups sliced citron
  • 1/2 cup candied pineapple
  • 1/4 cup candied lemon peel
  • 1/2 cup candied orange peel
  • 1 1/2 cups broken walnuts
  • 1/2 T grated orange rind
  • 1/2 cup fruit juice
  • 2 1/2 cups flour
  • 3/4 t salt
  • 1 1/2 t baking powder
  • 1/2 lb shortening
  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 1 1/2 t cinnamon
  • 1 t cloves
  • 1/2 t allspice
  • 1 t mace
  • 5 eggs - beaten
  • 12 T vanilla

Directions:
  1. Rinse raisins, drain, dry on a towel.
  2. Pour boiling water over the prunes and cover. Let them sit for 10 minutes then drain. Dry them then cut from pits into very small pieces.
  3. Rinse, drain, and dry citron and cherries before slicing.
  4. Combine the fruit, the nuts, and the orange rind. Pour the fruit juice over the combined fruits.
  5. Sift the flour, salt, and baking powder together.
  6. Cream the shortening, sugar, and spices until fluffy.
  7. Add the beaten eggs to the shortening and mix. Then add the flour, the fruit mixture, and the vanilla. Stir until the fruits are well distributed.
  8. Pour into pans and bake in a 275 degree oven for 3 to 4 hours.
